Sushi Chef / Chef de Partie – High-End Japanese Restaurant

About the role

We are looking for an experienced Sushi Chef / Chef de Partie to join a high‑level Japanese restaurant located in the heart of Brussels. The role involves preparing premium sushi and Japanese dishes for a discerning clientele in a fast‑paced, fine‑dining environment.

Key responsibilities

• Prepare and present a wide variety of sushi, sashimi, nigiri, maki and other Japanese specialties to the highest quality standards.
• Maintain the sushi station, mise en place and service flow during peak periods.
• Select, source and handle premium‑quality fish and ingredients with expertise.
• Ensure strict compliance with HACCP, food safety and hygiene regulations.
• Monitor stock levels, minimise waste and support cost‑control initiatives.
• Train and mentor junior sushi chefs and kitchen assistants.
• Contribute to menu development, seasonal offerings and special events.

Required profile

• Proven experience as a Sushi Chef or Chef de Partie in a high‑end Japanese or fine‑dining restaurant.
• Strong technical knowledge of sushi preparation, knife work and fish selection.
• Deep understanding of Japanese cuisine, ingredients and presentation standards.
• Ability to work efficiently in a high‑volume, high‑quality environment.
• Fluent English; French or Dutch is a strong advantage.
